This course is designed for students who wish to enter the catering industry, ultimately working within a food production environment. The course will allow for the development of basic practical cooking skills and the understanding required for a higher course in college or for work in the food industry at the operative level. You will complete work experience within a fresh food establishment so as to gain the essential experience of a real working environment.
If you are aged 16-18, you will be enrolled on a study programme which will include retaking GCSEs or undertaking Functional Skills in English and maths if you haven t already achieved a grade 4 or above. You will also be required to complete a work experience placement and an employability programme.
What You'll Learn
Working with only fresh produce, the course is varied and you could find yourself doing anything from preparing fresh bread and desserts through to the fresh production of lasagnes, pies and other savory products. You will learn excellent teamwork skills alongside gaining a sound knowledge of health and food safety. The course will deliver the basic skills of professional cookery within the catering industry; these include literacy and numeracy which form the basis of a chef when following recipes and taking orders. You will also work on personal and social skills throughout the course.
Course Syllabus:
• Work effectively as part of a hospitality team
• Maintain food safety when storing, preparing and cooking food
• Maintain a safe, hygienic and secure working environment
• Prepare and cook vegetables
• Prepare and clear areas for table service
• Provide table and tray service
Students will be expected to show that they can work alone and as part of a team. You will be required to work in the College's training restaurant to complete this programme of study
Entry requirements:
Applicants would benefit from achieving 3 GCSEs Grades D-F. Alternatively, applicants will be considered based on interview and a satisfactory skills scan, with a desire and commitment to complete the course they would wish to study.
